Green Mountain Gringo ® Chicken Salsa Soup
1 jar Green Mountain Gringo ® Salsa, your preferred variety
1 cup Green Mountain Gringo ® Tortilla Strips, broken into bits
4 cups Chicken Broth
2 cups Rotisserie chicken, cooked, shredded
1 cup Frozen corn
1 – 15 oz. can Canned black beans
1 1/2 cups Cheddar cheese, shredded
8 small slices Avocado, for garnish
1/2 cup Sour cream
- In a large saucepan, heat chicken broth and salsa until simmering.
- Add chicken, corn and black beans, heat on medium-high heat and bring to a boil.
- Reduce heat and continue to simmer for 5 minutes and heated throughly.
- Ladle into bowls and garnish with Green Mountain Gringo® bits of tortilla strips, cheese, avocado and a dollop of sour cream.
