Green Mountain Gringo ® Chicken Salsa Soup

Servings: 10-11oz
  • Green Mountain Gringo ® Salsa, your preferred variety
    1 jar
  • Green Mountain Gringo ® Tortilla Strips, broken into bits
    1 cup
  • Chicken Broth
    4 cups
  • Rotisserie chicken, cooked, shredded
    2 cups
  • Frozen corn
    1 cup
  • Canned black beans
    1 - 15 oz. can
  • Cheddar cheese, shredded
    1 1/2 cups
  • Avocado, for garnish
    8 small slices
  • Sour cream
    1/2 cup
  • In a large saucepan, heat chicken broth and salsa until simmering.
  • Add chicken, corn and black beans, heat on medium-high heat and bring to a boil.
  • Reduce heat and continue to simmer for 5 minutes and heated throughly.
  • Ladle into bowls and garnish with Green Mountain Gringo® bits of tortilla strips, cheese, avocado and a dollop of sour cream.
